Banana Yogurt Ice Cream Bars – Creamy Chocolate-Covered Frozen Treat

Picture biting into a frozen bar with a smooth, creamy banana center that melts as you eat it, wrapped in a crisp chocolate shell with a bit of crunch from chopped almonds on top. Cold, naturally sweet, genuinely satisfying — and none of the heaviness that usually comes with an actual ice cream bar.

That’s exactly what these are. Mashed banana blended with Greek yogurt and vanilla, frozen on sticks, then dipped in melted dark chocolate and finished with almonds. Simple ingredients, but the result feels like a real dessert rather than something you’re settling for because it’s “the healthy option.”

They’ve become the treat I reach for whenever I want something sweet and cold that still fits into how I want to eat. Here’s exactly how I make them.

What You’ll Need (makes 4 bars)

  • 2 large ripe bananas
  • 120g Greek yogurt (0–2% fat)
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons honey or maple syrup (optional, to taste)
  • A pinch of salt
  • 80g dark chocolate (70–85% cocoa)
  • 1 teaspoon coconut oil
  • 20g chopped almonds

How to Make Them

1. Prepare the banana base.

Peel the ripe bananas and add them to a mixing bowl. Mash slowly with a fork, pressing against the side of the bowl until they turn into a smooth, creamy purée. Taking your time here matters — large chunks tend to freeze too hard later, while a fully smooth base is what gives these bars their creamy texture.

2. Mix in the yogurt and flavor.

Add the Greek yogurt, vanilla extract, a small pinch of salt, and honey or maple syrup if you want extra sweetness. Stir slowly at first, then more thoroughly, until everything combines into a thick, smooth, naturally sweet filling. The yogurt adds creaminess and protein, while the vanilla gives it that softer, more dessert-like flavor.

3. Fill the molds.

Spoon the mixture into silicone ice cream molds, filling each one evenly so they all freeze at a similar rate. Tap the molds gently on the counter a few times to release trapped air bubbles, then smooth the tops with the back of a spoon. This step is what gives the finished bars a clean look and helps them hold their shape.

4. Freeze until fully solid.

Insert a wooden stick into the center of each bar, then freeze for at least 4 hours, until completely firm. This is essential — bars that aren’t fully frozen tend to melt too quickly during the chocolate-dipping step, break apart, or lose their shape.

5. Prepare the chocolate coating.

Once the bars are fully frozen, melt the dark chocolate together with the coconut oil in a small bowl, stirring until smooth, glossy, and thin enough to coat evenly. The coconut oil helps the chocolate spread more easily and sets into a crisp shell, giving you that satisfying crunch around a still-cold, creamy center.

6. Coat and finish.

Remove one bar from its mold at a time and dip it into the melted chocolate, turning gently so it’s fully covered. Sprinkle chopped almonds on top immediately, while the chocolate is still soft — they won’t stick once it hardens. Place the finished bars on parchment paper and freeze for another 10–15 minutes, until the chocolate shell is firm and crunchy.

Why These Actually Feel Like a Real Treat

The reason these work as more than just a “diet dessert” comes down to how they’re built. Made from simple, recognizable ingredients, there’s nothing here you have to think twice about — no unnecessary additives, no processed sugar hiding in the ingredient list. The combination of banana, Greek yogurt, and almonds brings fiber, protein, and healthy fat together, which is exactly what keeps you full and reduces the urge to reach for something else afterward.

They also genuinely taste like ice cream. The creamy interior paired with the crunchy chocolate-almond shell gives you that classic mix of textures without the heavy, overly sugary feeling that usually follows a real ice cream bar. You end up satisfied, not just temporarily distracted from a craving.

If you’ve been looking for a dessert that actually feels indulgent while still supporting what you’re working toward, these are worth making — proof that a frozen treat doesn’t have to be a trade-off.
