Healthy Mango Overnight Oats | Refreshing Summer Breakfast

Mornings have gotten a lot busier for me lately, and I’ve stopped expecting myself to cook something from scratch the second I get up. That’s the whole reason overnight oats became a regular thing in my kitchen.

The beauty of this method is that all the real work happens the night before, while you’re doing literally nothing.   • 1/2 cup unsweetened Greek yogurt

  • 1/2 teaspoon vanilla extract
  • 2 tablespoons nuts (almonds or walnuts), chopped

Step 1

Grab a jar or bowl big enough to hold everything without overflowing. Add the rolled oats first — they’re the foundation here and need room to soak up all the liquid overnight. Pour the coconut milk in next; it’s what softens the oats and builds that creamy base. Give it a quick stir so every oat flake gets coated and starts absorbing right away.

Step 2
