Strawberries & Cream Overnight Oats | Easy Meal Prep Breakfast

I spent a long time hunting for a breakfast that checked every box — filling, genuinely healthy, and something I’d actually want to eat instead of just tolerate. Most attempts landed somewhere close but not quite there: either too plain to be satisfying or sweet enough to feel indulgent but not actually nourishing.

These strawberry coconut overnight oats are the recipe that finally hit all three. Oats, chia seeds, coconut, protein powder, yogurt, almond milk, strawberries, and banana, mixed the night before and left to thicken in the fridge. The texture comes out smooth and rich, almost dessert-like, while still being balanced enough to eat every single day.

It’s become the breakfast that makes opening the fridge in the morning feel like something to look forward to, not just a routine. Here’s exactly how I make it.

What You’ll Need

  • 1 cup strawberries
  • ½ cup oats
  • 2 tablespoons shredded coconut
  • 1 tablespoon maple syrup
  • 2 tablespoons chia seeds
  • ¼ cup protein powder
  • ½ cup yogurt
  • ¾ cup almond milk
  • ½ banana

How to Make It

1. Prep the strawberries.

Wash the strawberries under cold running water, gently rubbing off any dirt, then pat them dry — extra moisture here can make the oats watery later. Remove the green tops and cut them into small, bite-sized pieces. Smaller pieces spread more evenly through the oats and release their natural juice as everything chills, giving every spoonful a fresh, fruity flavor.

2. Combine the dry ingredients first.

In a bowl, jar, or meal-prep container, add the oats, chia seeds, shredded coconut, and protein powder. Stir these together before adding any liquid — this small step prevents clumping, especially with protein powder and chia seeds, and sets up a smoother, more evenly textured final result.

3. Add the wet ingredients.

Pour in the yogurt, almond milk, and maple syrup. Stir slowly and thoroughly, scraping along the bottom and sides where dry ingredients tend to hide. Keep mixing until it looks creamy and combined — it should still be a little loose and liquid at this stage, since the oats and chia seeds need that moisture to soften and thicken overnight.

4. Fold in the strawberries.

Add most of the chopped strawberries and fold them in gently, without stirring too hard — you want them to stay juicy and intact rather than turning mushy. As the mixture chills, they’ll release a little juice that naturally flavors the whole batch. Save a few pieces to top it with later for a fresher, more colorful finish.

5. Let it chill and thicken.

Cover and refrigerate for at least 4 hours, ideally overnight. During this time, the oats absorb the liquid and become soft and creamy, the chia seeds swell into a thick, pudding-like texture, and the strawberry flavor spreads throughout. This resting period is what actually transforms simple ingredients into something creamy and cohesive — don’t rush it.

6. Stir again before serving.

Once out of the fridge, give it a good stir — it may look thicker on top or slightly separated, which is completely normal. Stirring brings it back together into a smooth, spoonable texture. Too thick? A small splash of almond milk loosens it up. Want it sweeter or more strawberry-forward? Add a bit more maple syrup, or mash a few extra strawberries into the mix.

7. Add toppings and enjoy.

Spoon into a bowl or eat straight from the jar. Top with banana slices for natural sweetness and a soft, creamy addition, plus extra strawberries, coconut flakes, or a light drizzle of maple syrup if you like. The finished oats should taste creamy, fruity, lightly sweet, and genuinely refreshing.

Why This One Actually Sticks as a Daily Habit

What makes this breakfast work isn’t just the ingredient list — it’s how balanced it feels afterward. The combination of oats, chia seeds, yogurt, and fruit provides steady, lasting energy instead of a quick sugar spike and crash, so you stay fueled through the morning rather than hitting a wall by 10 a.m. The fiber supports digestion and keeps things comfortable, while the protein from the yogurt and protein powder holds hunger off for hours — especially useful after a workout or during a busy morning.

The strawberries and banana bring natural sweetness that satisfies a craving without tipping into overly sugary, and the coconut adds just enough of a treat-like quality that this never feels like a compromise. It’s the rare breakfast that manages to feel indulgent and genuinely nourishing at the same time.

If mornings have felt like a struggle between “quick” and “actually good for you,” this is worth adding to your rotation — proof that a breakfast can be both without much effort at all.
