I have always been a blueberry ice cream person.
That fresh, slightly sweet, fruity flavor is just something I could never get enough of — especially in summer when all I want is something cold and satisfying that instantly makes everything feel better.
But store-bought blueberry ice cream was never really working with where I wanted to be with my body. Too much cream, too much sugar, and that heavy feeling afterwards that always took the joy out of the whole thing.
So I decided to make my own version. Something that still felt like a real treat — just lighter, cleaner, and made from ingredients I could actually feel good about.

What You Need
- 1 cup blueberries
- 1 cup low-fat vanilla Greek yogurt
- 1 tbsp honey
- 1 tbsp lemon juice
- ¼ cup unsweetened almond milk
- A few drops of vanilla extract

How To Make Them
Step 1 — Blend everything together
Add your blueberries, Greek yogurt, honey, lemon juice, almond milk, and vanilla extract all into a blender and blend until completely smooth and creamy. Watch the blueberries turn the whole mixture into that gorgeous deep purple color. The yogurt makes it thick and creamy, the lemon juice brightens the flavor and stops it tasting heavy, and the honey adds just enough sweetness without making it overly sugary. Even before freezing it already looks and smells incredible. 💜
Step 2 — Taste and adjust
Give the mixture a quick taste before pouring into molds. This is one of the best parts of making things at home — you are in complete control. Want it slightly sweeter? A tiny extra drizzle of honey. Want it fresher and brighter? Another small squeeze of lemon. If your blueberries are ripe and sweet the natural flavor is usually already perfect without any changes at all.
Step 3 — Pour into popsicle molds
Pour the mixture carefully into your popsicle molds leaving just a small amount of space at the top — the mixture expands slightly as it freezes so do not fill them completely to the brim. No popsicle molds? Small cups or jars work perfectly — just insert wooden sticks once the mixture has started to firm up slightly.
Step 4 — Insert the sticks
Place your popsicle sticks into the molds. If your mold has a lid that holds them in place that makes everything even easier. If you are using cups, freeze them for about 30 minutes first until slightly thickened then insert the sticks so they stand upright perfectly.
Step 5 — Freeze overnight
Place in the freezer for at least 4 to 6 hours — overnight is always better. The longer they freeze the better the texture becomes. Firm, smooth, and perfectly set all the way through. This is the step that requires the most patience but delivers the most satisfying result. 💜

Step 6 — Remove and enjoy
Take them out of the freezer and remove from the molds. If they do not slide out immediately just run the outside of the mold under warm water for a few seconds — that loosens them perfectly without melting them. Then enjoy immediately while they are perfectly cold and fresh.
